The self-hosting configuration docs were deleted without explanation

There appears to be no documentation on pausible.io about configuring a self-hosted instance.

I see that it was removed all at once in a single commit, 6ca2603, with no explanation as to why or linked workitems and a title that just says "update self-hosting-configuration".

This means that no documentation exists for any of the environment variables or other config options CE can use.

Google searches for these environment variables or other options drop users on an empty page.
